The Easiest Pickled Onions
Ingredients:

1 large red onion (thinly sliced)

1 cup white vinegar (you can also use apple cider vinegar or red wine vinegar)

1 cup water

1-2 tablespoons sugar (adjust to taste)

1 tablespoon salt

Optional flavorings: 5-6 peppercorns, 1 garlic clove (smashed), a few mustard seeds, or a bay leaf
Instructions:

Slice the onion thinly and place in a clean jar or bowl.

Heat the vinegar, water, sugar, and salt in a small saucepan over medium heat until the sugar and salt dissolve completely.

Add optional flavorings to the hot brine if you like.

Pour the hot brine over the sliced onions, making sure they are fully submerged.

Let it cool to room temperature, then cover and refrigerate.

The onions will be ready to eat after about 1 hour, but taste better after at least 24 hours.
Storage: Keep refrigerated and use within 2-3 weeks.
